In a large bowl, combine coconut milk (reconstitute if using powdered coconut milk), eggs, almond butter, coconut oil, coconut sugar and vanilla. Mix baking soda and salt into coconut flour, add cinnamon or other spices to taste and stir into wet ingredients. Be sure to mix very well to prevent coconut flour from getting lumpy.Let stand 10 minutes for the batter to come together. Heat coconut oil on a hot skillet, ladle on pancakes, being careful not to crowd the pan. Cook 2-3 minutes,flip and cook 2 minutes on the other side. Top with butter or coconut oil and maple syrup and serve immediately. Serves 1-2 people.
