Combine the coconut nectar, coconut oil, vanilla and egg with an electric mixer or beat well by hand. Combine remaining dry ingredients, adding in 1/3 at a time, combining well. Wrap dough in plastic wrap and chill for 1 hour.
Roughly chop and add the strawberries to a saucepan with a tablespoon of water over medium heat. Cook 5 minutes until softened, then puree in a food processor until smooth and return to pan. Combine corn starch with enough water to turn to liquid, add to strawberries and turn heat to low and stir until mixture begins tothicken.
Preheat oven to 350°F. Roll out dough and cut into 4×2 inch squares. Spoon strawberries on one side, and fold over, primping the edges. Place bars onto a cookie sheet and bake for 15 minutes. Store in an airtight container.
