Carrot Coconut Cake

  • 3 cup carrots, shredded
  • 1 cup coconut oil, softened
  • 1 cup coconut sugar
  • 3 eggs
  • 2/3 cup pineapple juice
  • 1 tsp vanilla extract
  • 2/3 cup unsweetened coconut
  • 2 cups whole wheat flour
  • ½ teaspoon salt
  • 2 tsp baking soda
  • 1 tsp baking powder
  • 2 tsp cinnamon
  • ½ teaspoon clove
  • ½ teaspoon nutmeg


1. Preheat oven 350 degrees F (375 for higher altitudes). Wisk together coconut oil and sugar, mix in eggsand then pineapple juice; mix invanilla. Add carrots and coconut last and mix well.

2. Sift flour and add salt, baking powder and soda and spices and mix very well. Add flour mixture to carrot mixture and mix until combined. Over-mixing will result in dry cake.

3. Add batter to cake pan or rounds, and bake for 30-35 minutes, or until a toothpick comes out clean.Frost with cream cheese frosting or the icing of your choice.
